Recipe for sopa de marisco. A tasty seafood soup that is perfect for cold winter days. It may sound difficult, but this recipe is actually very simple and quick to make.
Ingredients for 4 people
- 500 grams of mixed seafood (any kind of fish can actually be used in seafood soup, but for example use shrimp, mussels and/or squid)
- 1 onion
- 2 cloves of garlic
- 1 potato
- 1 carrot
- 1 leek
- 1 liter of fish stock
- Olive oil
- Salt
- Pepper
Preparation of the seafood soup
- Chop the onion and garlic. Cut the potato, carrot and leek into cubes.
- Fry the vegetables in a large pan with olive oil until translucent.
- Add the fish stock and bring to the boil.
- Add the seafood and let simmer for about 10 minutes. Be careful not to overcook the fish!
- Season with salt and pepper.
- Serve the soup with some fresh bread and butter, or good olive oil.
