RECIPE for SEAFOOD SOUP

Recipe for sopa de marisco. A tasty seafood soup that is perfect for cold winter days. It may sound difficult, but this recipe is actually very simple and quick to make.

Ingredients for 4 people

  • 500 grams of mixed seafood (any kind of fish can actually be used in seafood soup, but for example use shrimp, mussels and/or squid)
  • 1 onion
  • 2 cloves of garlic
  • 1 potato
  • 1 carrot
  • 1 leek
  • 1 liter of fish stock
  • Olive oil
  • Salt
  • Pepper

Preparation of the seafood soup

  1. Chop the onion and garlic. Cut the potato, carrot and leek into cubes.
  2. Fry the vegetables in a large pan with olive oil until translucent.
  3. Add the fish stock and bring to the boil.
  4. Add the seafood and let simmer for about 10 minutes. Be careful not to overcook the fish!
  5. Season with salt and pepper.
  6. Serve the soup with some fresh bread and butter, or good olive oil.
